Directions

Step 1

Peel and thinly slice the lotus root. Soak in water to prevent discoloration.

Cook the rice according to package instructions.

Step 3

Set aside when done.

Blanch spinach in boiling water for 1 minute. Drain and rinse under cold water.

In a pan, heat sesame oil and sauté garlic until fragrant. Add lotus root slices and stir-fry for 5 minutes.

Add doenjang and soy sauce to the lotus root, stirring well to coat evenly. Cook for another 3 minutes.
