In a bowl, combine ground beef, finely chopped onion, breadcrumbs, egg, salt, and pepper. Mix until well combined and form into thick patties.

Heat butter in a skillet over medium heat. Sear the patties on both sides until browned, about 3-4 minutes per side.

Remove patties and set aside. In the same skillet, sprinkle flour and cook briefly to form a roux.

Gradually add beef stock while stirring to make a smooth gravy.

Return patties to the skillet and simmer for 10 minutes until cooked through and coated with gravy.

Serve the chopped steak hot with gravy poured over it, alongside mashed potatoes, rice, or vegetables.
