Directions

Step 1

Prepare the jasmine tea by steeping it in hot water for 5 minutes. Strain and set aside.

Step 2

In a bowl, mix soy sauce, brown sugar, minced garlic, grated ginger, salt, and pepper. Add the brewed jasmine tea.

Step 3

Place the duck in a large dish and pour the marinade over it, ensuring it’s well coated. Marinate for at least 2 hours.

Step 4

Preheat the oven to 180°C. Transfer the duck to a roasting pan, reserving the marinade.

Step 5

Add star anise and cinnamon to the marinade. Bring to a boil, then reduce heat and simmer for 10 minutes.

Step 6

Roast the duck in the oven for 35 minutes, basting with the spiced marinade every 10 minutes. Remove, let rest, and serve.
