Directions

Step 1

Soak rice and lentils separately in water for 4-6 hours. Drain and grind into a smooth batter using minimal water. Combine both and add salt.

Step 2

Cover and ferment the batter overnight or for 8-10 hours until it rises and becomes airy.

Step 3

Chop onion, tomato, carrot, and capsicum into small pieces. Keep aside.

Step 4

Heat a non-stick pan and pour a ladle of batter, spreading gently into a thick pancake. Sprinkle chopped vegetables evenly on top.

Step 5

Drizzle oil around edges and cook on medium flame until the base turns golden brown. Flip carefully and cook for another 2-3 minutes.

Step 6

Serve hot with coconut chutney.

Step 7

Optionally, serve with sambar for a complete meal.
