Step 1

Heat a pan over medium heat and dry roast the Semolina, stirring continuously to ensure even heating. Continue until it releases a light aroma and turns slightly warm in color. Transfer to a bowl and set aside to prevent further toasting.

In the same pan, add Oil and allow it to heat. Add Mustard Seeds and wait until they begin to splutter. Add Curry Leaves, Ginger, Onion, and Green Chilli. Sauté until the Onion becomes soft and translucent, ensuring the aromatics are evenly cooked.

Pour in Water and add Salt. Bring the mixture to a gentle boil while stirring to distribute seasoning evenly. Maintain steady heat so the liquid heats uniformly without evaporating too quickly.

Step 4

Lower the heat and gradually add the roasted Semolina while stirring continuously to avoid lumps. Keep stirring until the mixture thickens, absorbs moisture, and forms a soft, fluffy texture. Cover briefly, turn off heat, and let it rest before serving.
