Directions

Step 1

Peel and dice the sweet potatoes into small cubes. Boil them in water until tender, about 10 minutes, then drain and set aside.

Step 2

Heat a skillet over medium heat. Add a little oil and sauté the onions until translucent. Then add the tomatoes and cook for another 3 minutes.

Scramble the eggs in a separate pan until cooked but still soft.
