Directions

Step 1

Marinate the chicken breasts with sumac, juice of one lemon, 2 tablespoons of olive oil, salt, and pepper. Set aside for 20 minutes.

Step 2

Heat a grill pan over medium heat. Cook the marinated chicken for 6-8 minutes on each side until golden and cooked through.

Step 3

Rinse the bulgur under cold water. Place it in a pot with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 12 minutes.

While bulgur cooks, chop pistachios and herbs finely.

Step 5

Once bulgur is done, fluff with a fork and stir in pistachios, parsley, mint, and remaining olive oil.

Step 6

Slice the cooked chicken and squeeze the juice of the remaining lemon over it.

Step 7

Serve the chicken over the bulgur pilaf garnished with extra herbs and lemon wedges.
