Directions

Step 1

Rinse the lentils thoroughly and place them in a pot with water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and set aside.

Preheat the oven to 350°F (175°C). Cut pita bread into small squares and place on a baking sheet. Drizzle with olive oil and sprinkle with sumac. Bake for 10 minutes until crispy.

Dice the cucumber and tomatoes into small cubes.

Thinly slice the red onion.

Chop the parsley finely.

In a large bowl, combine cooked lentils, diced cucumber, tomatoes, and red onion. Add chopped parsley and mix well.

In a small bowl, whisk together olive oil, lemon juice, cumin, coriander, and additional sumac. Pour the dressing over the lentil mixture and toss to coat evenly.
