Directions

Step 1

In a bowl, combine lamb with Ras el Hanout, 1 Tbsp of olive oil, and salt. Marinate for 30 minutes.

Step 2

Heat 1 Tbsp of olive oil in a pan over medium heat. Add the marinated lamb and cook until browned on all sides.

Step 3

Add chopped onion to the pan and cook until soft. Stir in apricots and cook for another 2 minutes.

Step 4

In a separate pot, bring water to a boil. Add couscous, remove from heat, cover, and let sit for 5 minutes.

Step 5

Fluff couscous with a fork and stir in remaining olive oil, chopped mint, and black pepper.

Step 6

Serve the lamb over the couscous, garnished with additional mint if desired.
