Directions

Step 1

Peel and cut potatoes into thick fries. Soak in cold water for 20 minutes, then drain and pat dry.

Step 2

Heat oil in a deep pot or fryer to 325°F (165°C). Fry potatoes for 4–5 minutes until soft but not browned. Remove and drain.

Step 3

Increase oil temperature to 375°F (190°C).

Step 4

In a bowl, whisk flour, cornstarch, baking powder, salt, pepper, and paprika. Slowly whisk in cold beer to form a smooth batter.

Step 5

Pat fish dry and lightly dust with flour

Step 6

Dip fish into batter and carefully place into hot oil

Step 7

Fry 4–6 minutes until golden and crispy

Step 8

Fry potatoes again at 375°F for 3–4 minutes until golden brown and crispy.

Step 9

Drain on paper towels, season with salt, and serve hot with tartar sauce and lemon wedges.
