Directions

Step 1

In a bowl, mix coriander, pomegranate molasses, 2 tbsp olive oil, and salt. Marinate chicken for 20 minutes.

Rinse quinoa under cold water. In a pot, add quinoa, 2 cups of water, and saffron. Bring to boil, reduce heat, and simmer for 15 minutes.

Heat remaining olive oil in a pan over medium heat. Add marinated chicken and cook for 7 minutes on each side or until cooked through.

Mince garlic and add to the pan with chicken.
