Directions

Step 1

Preheat the oven to 200°C (400°F). Season the lamb with salt, pepper, and half of the coriander.

In a food processor, blend pistachios and remaining coriander until finely ground.

Press the mixture onto the lamb.

Heat olive oil in a skillet over medium heat. Sear the lamb on all sides until golden brown, about 5 minutes.

Transfer the lamb to a baking dish and roast in the oven for 20-25 minutes or until cooked to desired doneness.
