Directions

Step 1

Marinate the chicken with sumac, crushed peppercorns, and 1 Tbsp olive oil. Set aside for 15 minutes.

Step 2

Heat 1 Tbsp olive oil in a pan over medium heat. Cook chicken until golden brown and fully cooked, about 7 minutes per side.

Step 3

In a pot of boiling water, add orzo and cook until al dente. Drain and set aside.

Step 4

In a pan, heat remaining olive oil. Add chopped garlic and cook until fragrant.

Step 5

Add pistachios and toast lightly.

Step 6

Mix saffron in 2 Tbsp warm water. Add saffron water to the pan with orzo, pistachios, and salt. Stir well.

Step 7

Plate the orzo, top with sliced chicken, and drizzle with lemon juice before serving.
