Directions

Step 1

Marinate the lamb with za’atar, honey, salt, and black pepper for at least 30 minutes.

Step 2

Heat 1 Tbsp olive oil in a pan over medium heat and cook the lamb until browned on all sides.

Step 3

In a separate pot, heat the remaining olive oil and sauté the chopped onion and garlic until translucent.

Step 4

Add rice to the pot and stir for 2 minutes before adding 4 cups of water. Bring to a boil.

Step 5

Reduce heat, cover, and let the rice simmer for 15 minutes. Stir in chopped pistachios and the juice and zest of the orange.

Step 6

Serve the lamb over the pistachio orange rice, garnished with additional za’atar if desired.
