Directions

Step 1

Wash, peel, and cut the potatoes into small cubes. Clean the fenugreek leaves and chop them finely. Dice the onion and tomato into small pieces.

Step 2

Heat oil in a pan over medium heat. Add onion and sauté until translucent. Then add turmeric and chili powder, stirring well.

Step 3

Add the potato cubes and stir to coat with spices.

Step 4

Cover and cook for 10 minutes until potatoes are half done.

Step 5

Add chopped tomatoes and fenugreek leaves. Mix well, add salt, and cook uncovered for another 10-15 minutes until potatoes are tender and leaves are cooked.

Step 6

Serve hot with roti or rice as a side or main dish.
