Directions

Step 1

Heat olive oil in a large pot over medium heat. Sauté chicken pieces until browned, then remove and set aside.

Step 2

In the same pot, cook sausage slices until lightly browned. Add onion, bell pepper, celery, and garlic, sauté until softened.

Step 3

Stir in rice, diced tomatoes, chicken broth, Cajun seasoning, thyme, bay leaf, salt, and pepper. Bring to a boil.

Step 4

Return chicken to the pot. Reduce heat to low, cover, and simmer 20–25 minutes until rice is tender.

Step 5

Add shrimp, stir gently, cover, and cook 5–7 minutes until shrimp are pink and cooked through.

Step 6

Remove bay leaf and serve hot. Garnish with chopped parsley if desired.
