Boil water in a large pot, add salt, and cook the spaghetti until al dente, according to package instructions.

While the pasta cooks, cut pancetta into small cubes and fry it in a pan over medium heat until crisp.

In a bowl, whisk together eggs and grated cheese until smooth.

Season with a pinch of pepper.

Drain the pasta, reserving some cooking water, and immediately toss it with the pancetta in the pan.

Remove from heat, add the egg and cheese mixture, and stir quickly to create a creamy sauce without scrambling the eggs. Add a little reserved pasta water if needed.

Serve hot, sprinkled with additional cheese and pepper as desired.
