Directions

Step 1

Preheat the oven to 200°C. In a bowl, combine the pomegranate molasses and sumac. Add the chicken and mix well to coat. Let marinate for 15 minutes.

Heat 2 tablespoons of olive oil in a pan. Add the chicken and sear on both sides until golden. Transfer to a baking dish and bake for 20 minutes.

While the chicken is baking, rinse the rice under cold water. Heat 1 tablespoon of olive oil in a pot and sauté the chopped onion until soft.

Add the rice, cumin, cardamom, and salt to the pot with the onion. Stir well to coat the rice with the spices.

Pour in 4 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and fluffy.

Stir in the pistachios into the cooked rice. Serve the chicken over the pistachio rice, garnished with fresh herbs if desired.
