Directions

Step 1

Wash the spinach thoroughly and blanch it in hot water for 2 minutes. Transfer immediately to cold water to preserve the color.

Step 2

Drain the spinach and blend into a smooth puree using a little water. Set aside.

Step 3

Heat oil in a pan. Add cumin seeds and let them splutter.

Step 4

Add finely chopped onions and sauté until golden brown.

Add ginger, garlic, and green chili paste. Cook until raw smell disappears.

Mix in chopped tomatoes and cook until they soften and oil begins to separate.

Add turmeric, coriander powder, salt, and fenugreek leaves. Stir well.

Step 8

Pour in the spinach puree and cook on medium heat for 10 minutes, stirring occasionally.

Step 9

Add paneer cubes and simmer for another 5–7 minutes so they absorb the flavors.

Step 10

Finish with fresh cream and stir gently. Serve hot with rice or naan.
