Directions

Step 1

Cut the beef into thin strips and marinate with soy sauce, cornflour, black pepper, and vinegar. Let it rest for 30 minutes.

Step 2

Heat sesame oil in a wok over high flame until smoking hot.

Step 3

Add marinated beef strips and stir-fry until they change color and start browning.

Step 4

Remove the beef and set aside. In the same wok, add chopped garlic and green chilies. Sauté until fragrant.

Step 5

Add diced bell pepper and cook for 2–3 minutes to keep it crunchy.

Step 6

Return the beef to the wok. Mix well and stir-fry for another 5 minutes.

Step 7

Pour in a splash of water to deglaze the pan and create a light glaze on the beef.

Step 8

Adjust salt, add more soy sauce or vinegar to taste. Let the mixture thicken slightly.

Step 9

Add spring onions and give everything a final toss.

Step 10

Serve hot with steamed rice or noodles, garnished with extra green chilies if desired.
