Directions

Step 1

Prepare the Coffee in a bowl and set it aside to cool completely. This prevents the Biscuit from becoming soggy while still absorbing flavor evenly.

Step 2

Separate the Egg into two bowls. Whisk the yolk with Sugar until pale and smooth. In another bowl, beat the white until it forms soft peaks for a light texture.

Step 3

Fold the Cream into the yolk mixture gently until fully combined. Then carefully incorporate the beaten white using slow, lifting motions to keep the mixture airy.

Step 4

Quickly dip each Biscuit into the Coffee.

Step 5

Arrange a single layer in the base of a serving dish.

Step 6

Spread half of the Cream mixture evenly over the layer.

Step 7

Add a second layer of Coffee dipped Biscuit. Top with the remaining Cream mixture and smooth the surface with a spatula to ensure even setting.

Step 8

Cover and chill for at least 2 hours. Just before serving, dust the top generously with Cocoa, slice cleanly, and serve well chilled.
