Directions

Step 1

Rinse the rice under cold water until the water runs clear. Add the rice and 3 cups of water to a pot. Bring it to a boil, then lower the heat and simmer for 20 minutes until cooked.

While the rice cooks, cut the tofu into bite-sized cubes. Set aside.

Step 3

In a small saucepan, bring 4 cups of water to a boil. Steep the green tea in the boiling water for 5 minutes. Remove the tea leaves and keep the tea warm.

Zest the yuzu and squeeze out the juice. Combine yuzu juice and zest with soy sauce in a bowl.

Add tofu cubes to the mixture and marinate for 10 minutes.

Step 6

Once the rice is cooked, fluff it with a fork. Divide the rice into four bowls.

Step 7

Top each bowl with marinated tofu, torn shiso leaves, and crumbled nori. Pour hot green tea over the rice and garnish with sesame seeds. Serve immediately.
