Directions

Step 1

Peel and dice the kabocha into small cubes. Steam until tender, about 15 minutes, then mash until smooth.

In a large bowl, combine the mashed kabocha, glutinous rice flour, sugar, salt, and water. Mix until a dough forms.

Peel the yuzu and finely chop the peel. Add the yuzu peel and chopped shiso leaves to the dough and mix until well incorporated.

Dust a surface with cornstarch and knead the dough gently. Divide into equal portions and shape into balls.
