Step 1
Soak the skewers in water for at least 30 minutes to prevent burning during grilling.
Step 2
Cut the chicken into bite-sized pieces and set aside in a large mixing bowl.
Step 3
In a separate bowl, mix coconut milk, soy sauce, lime juice, brown sugar, and turmeric until smooth.
Step 4
Add minced garlic and coriander powder to the marinade and stir well to combine.
Step 5
Pour the marinade over the chicken pieces and mix to coat evenly. Cover and marinate for at least 1 hour in the refrigerator.
Step 6
While the chicken is marinating, prepare the peanut sauce by mixing peanut butter, soy sauce, lime juice, and a splash of water until smooth.
Step 7
Thread the marinated chicken pieces onto the soaked skewers, dividing them evenly.
Step 8
Preheat a grill or grill pan over medium-high heat and lightly oil the surface.
Step 9
Grill the skewers for 4–5 minutes on each side or until the chicken is cooked through and slightly charred.
Step 10
Serve hot with the prepared peanut sauce and steamed rice or salad on the side.
