Directions

Step 1

Cook the rice a few hours in advance or use leftover rice to ensure it’s dry and fluffy.

Step 2

Finely chop the garlic, onion, and carrot. Slice the spring onion and set aside.

Step 3

Heat oil in a wok over medium-high heat. Add garlic and sauté for 30 seconds until fragrant.

Add the chopped onion and carrot. Stir-fry for 2–3 minutes until slightly soft.

Push the vegetables to one side and crack the eggs into the wok. Scramble them quickly and mix with the vegetables.

Step 6

Add the diced chicken and stir-fry until cooked through, about 5–6 minutes.

Step 7

Add the rice, breaking up any clumps. Mix well with the chicken and vegetables.

Step 8

Pour in the fish sauce and soy sauce. Stir thoroughly to coat everything evenly.

Step 9

Add the spring onions and stir-fry for another minute. Adjust seasoning if needed.

Step 10

Serve hot with lime wedges on the side. Squeeze lime juice over the rice before eating for extra flavor.
