Directions

Step 1

Peel and devein the shrimp, leaving tails on. Pat them dry using paper towels.

Cut carrot and zucchini into thin sticks or slices about 2-3 inches long.

In a large bowl, whisk together the egg and cold water until frothy.

Add flour, cornstarch, and baking powder into the egg mixture. Stir briefly—do not overmix. The batter should be slightly lumpy and cold.

Heat vegetable oil in a deep pot over medium-high heat until it reaches 180°C (350°F).

Dip shrimp one by one into the batter and carefully place in hot oil.

Fry until golden and crisp, about 2–3 minutes per side.

Remove shrimp using a slotted spoon and drain on a wire rack or paper towels.

Repeat the frying process for the vegetables, frying each type separately for even cooking.
