Directions

Step 1

Wash and cut the chicken into bite-sized pieces.

Step 2

Marinate chicken with 1 Tbsp soy sauce and 1 Tbsp cornflour. Let it sit for 15 minutes.

Step 3

Cook rice separately according to package instructions and set aside.

Step 4

Heat oil in a pan and fry marinated chicken until golden and cooked through. Remove and set aside.

In the same pan, sauté chopped garlic for 30 seconds.

Step 6

Add bell pepper and stir-fry for 2 minutes.

Step 7

Add pineapple chunks and cook for another 2 minutes.

Step 8

In a bowl, mix vinegar, ketchup, sugar, soy sauce, and remaining cornflour with half a cup of water. Stir until smooth.

Step 9

Pour the sauce into the pan and stir until it thickens.

Add fried chicken to the sauce and mix well.

Cook for 3-5 minutes on low heat to absorb flavors.

Step 12

Serve hot over a bed of steamed rice.
