Directions

Step 1

Preheat the oven to 180°C. Wash the bell peppers and cut off the tops, removing the seeds and membranes carefully. Set aside.

Step 2

Cook the rice in boiling water until tender. Drain and set aside.

Step 3

Chop the onion, tomato, and carrot into small pieces.

Step 4

In a pan, sauté the onion until translucent, then add carrot and tomato and cook for 5 minutes.

Step 5

Mix the cooked rice with the sautéed vegetables. Add salt and pepper to taste.

Step 6

Stuff the prepared bell peppers with the rice mixture and top with grated cheese.

Step 7

Place the stuffed peppers in a baking dish, cover with foil, and bake for 30 minutes. Remove foil and bake for another 10 minutes until cheese is golden and peppers are tender.
