Directions

Step 1

In a large bowl, combine milk powder, all purpose flour, semolina, and baking soda.

Step 2

Add melted butter and mix until the mixture becomes crumbly in texture.

Step 3

Add yogurt one spoon at a time and knead gently into a soft dough. Let it rest for 15 minutes.

Step 4

Meanwhile, prepare sugar syrup by boiling water and sugar together. Stir occasionally until sugar dissolves.

Step 5

Add cardamom powder and rose water to the syrup. Simmer for 5 more minutes and keep warm.

Step 6

Divide the dough into equal-sized balls. Roll them gently without cracks to avoid breaking while frying.

Step 7

Heat oil in a deep pan on medium flame. Fry the balls in batches, stirring gently for even browning.

Step 8

Remove when golden brown and place directly into warm syrup. Let them soak for at least 30 minutes.

Step 9

Ensure the syrup is warm, not hot, to keep the balls soft.

Step 10

Soak longer for deeper flavor.

Step 11

Serve warm or chilled, garnished with crushed pistachios or silver leaf if desired.
