Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Peel and cube the kabocha. Dice the tofu and shiso leaves. Chop the onion finely.

Step 3

In a pot, heat sesame oil over medium heat. Sauté the onion until translucent.

Add kabocha and tofu to the pot. Stir gently for 2-3 minutes.

Add soy sauce and mirin. Cook for another minute.

Step 6

Add the rinsed rice and dashi to the pot. Stir once, then bring to a boil.

Step 7

Reduce heat to low, cover, and simmer for 20 minutes until rice is cooked. Stir in shiso leaves before serving.
