Directions

Step 1

Preheat the oven to 180°C. Cut the kabocha into slices and place them on a baking tray. Drizzle with olive oil and season with salt and pepper.

Roast the kabocha for 25-30 minutes until tender and slightly caramelized.

While the kabocha is roasting, cut the tofu into slices and pat dry. Heat sesame oil in a pan and fry the tofu until golden brown on both sides.

Add minced garlic to the tofu, followed by soy sauce. Cook for another 2 minutes until the tofu is well coated.

Toast the bread slices until golden brown. Lay shiso leaves on half of the bread slices.

Assemble the sandwich by layering roasted kabocha and tofu on top of the shiso leaves. Top with another slice of bread and serve warm.
