Directions

Step 1

Rinse the basmati rice thoroughly and soak it in water for 20 minutes. Drain and set aside.

In a large pan, heat oil and add cumin seeds. Once they splutter, add the onions and sauté until golden brown.

Add ginger garlic paste and green chilies to the onions and cook for 2 minutes. Stir in the tomatoes and cook until soft.

Add paneer cubes, turmeric powder, coriander powder, and garam masala, mixing well. Cook for 5 minutes, allowing the paneer to absorb flavors.

Pour in the coconut milk and bring to a gentle simmer. Add salt to taste.

In a separate pot, cook the soaked rice until 70% done. Layer the rice over the paneer mixture, cover, and cook on low heat for 10 minutes to let the flavors meld.

Garnish with fresh coriander leaves and serve hot with raita or a salad.
