Directions

Step 1

Heat olive oil in a deep pot over medium heat. Add onion and cook until soft. Stir in chicken and cook until lightly browned on all sides, allowing the base to develop a rich flavor.

Step 2

Add tomato, carrot, zucchini, chickpeas, salt, pepper, cumin, and cinnamon. Pour in water and mix well to combine all ingredients evenly.

Step 3

Bring the mixture to a gentle boil, then reduce heat and cover. Let it simmer slowly for 40–50 minutes so the vegetables become tender and the broth turns aromatic.

Step 4

Place couscous in a wide bowl. Add a small amount of warm water and gently rub the grains with your hands to separate them.

Step 5

Steam the couscous over the simmering broth for about 15 minutes.

Step 6

Remove and fluff the grains to keep them light.

Step 7

Repeat steaming once more for a soft, airy texture.

Step 8

Transfer couscous to a serving dish and spoon the chicken and vegetables over the top. Ladle some broth to moisten and serve warm.
