Directions

Step 1

Rinse catfish fillets and pat dry. Soak in buttermilk for 15–20 minutes.

Step 2

In a shallow dish, mix cornmeal, flour, salt, black pepper, paprika, and cayenne.

Step 3

Heat vegetable oil in a skillet over medium-high heat to 350°F (175°C).

Step 4

Dredge each fillet in the cornmeal mixture, pressing lightly to coat

Fry fillets 4–5 minutes per side until golden brown and cooked through
