Directions

Step 1

Grate the carrots finely and keep them ready. In a heavy pan, heat ghee and add the grated carrots. Cook on medium flame for 5-7 minutes until soft.

Step 2

Add milk gradually to the carrots and continue stirring frequently. Cook until the milk is almost absorbed by the carrots.

Step 3

Mix in the sugar and cook for another 10-15 minutes until the mixture thickens. Stir continuously to avoid sticking.

Step 4

Add grated coconut and cardamom powder to the mixture.

Step 5

Garnish with cashew nuts and cook for 5 more minutes.

Step 6

Serve warm or at room temperature.
