Yaki salmon and spring onion skewers

Hiya! Today we will discuss about Yaki salmon and spring onion skewers

INGREDIENTS

  • soy sauce* 3 tablespoons
  • brown sugar 1½ teaspoons
  • garlic, minced 2 cloves
  • finely grated ginger 2 teaspoons
  • sesame oil 1½ teaspoons
  • chilli sauce (optional)* 1 teaspoon
  • fresh salmon fillet (skin and bones removed), cut into 3cm pieces 600-800 grams
  • spring onions, cut into 3cm lengths 1 bunch (4-5)
  • skewers (if using bamboo ones, soak in water for about 20 minutes) 12
  • oil, for cooking
  • lightly toasted sesame seeds (toast in dry pan on medium heat, stirring, until fragrant and lightly coloured; remove from pan immediately) 1 tablespoon

 

METHOD

In a large bowl, combine soy sauce, brown sugar, garlic, ginger, sesame oil and chilli sauce (if using). Add salmon and toss to coat. Leave to marinate for 30 minutes, or up to 4 hours in fridge. Thread marinated salmon and spring onion pieces onto skewers. Heat a good drizzle of oil on barbecue hotplate or in a large frying pan or grill pan. Cook for about 2 minutes on each side until salmon is golden and just cooked through (salmon is best cooked medium, so be careful not to overcook) and spring onion is soft and lightly charred. Serve sprinkled with sesame seeds.

Chicken Wing Dip Recipe

Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl and stir together the cream cheese and hot pepper sauce until well blended. Mix in the Ranch dressing, chicken and Cheddar cheese. Spread into a 9×13 inch baking dish. Bake for 30 minutes in the preheated oven. If oil collects on the top dab it off using a paper towel. Serve with tortilla chips.

Tagliatelle with grilled chicken & tomatoes

Heat the grill to high. Coat the chicken with the lemon zest and juice, tarragon, salt and pepper. Put in a large, shallow ovenproof dish or roasting tin in one layer. Brush lightly with a little oil, then grill for 6 mins. Turn the chicken over and add the tomatoes to the dish, cut-side up, brushing them lightly with oil. Grill for a further 6-8 mins until the chicken is cooked and lightly browned and the tomatoes are tender. Meanwhile, cook the pasta in a large pan of boiling water according to pack instructions. Drain well, reserving 150ml of the cooking water, then return to the pan. Remove the chicken from the dish and cut into chunks. Add to the pasta with the tomatoes, cooking water and pan juices. Toss everything together well and serve.

Mango chicken, bean & rice bake

Put the spring onions, ginger, garlic, chilli, coriander stalks, thyme, lime zest and juice, allspice and oil in a food processor, then blend to a paste. Pour over the chicken drumsticks and leave to marinate for at least 1 hr, or preferably up to 1 day. Heat oven to 180C/160C fan/gas 4. Tip the rice and beans into a large roasting tin with deep sides. Remove the chicken from the marinade and set aside. Mix the stock into the marinade in the bowl and stir well. Pour the stock over the rice and beans, then put the chicken drumsticks and the mango pieces on top. Cover the tray tightly with foil and bake for 30 mins. Take the tray out of the oven and remove the foil. Increase the temperature to 220C/200C fan/gas 7. Spoon the mango chutney over the drumsticks and return to the oven, uncovered, for 35-40 mins, to brown the chicken pieces and allow the rice to absorb all the liquid. Before serving, fluff up the rice a little with a fork and scatter with the coriander leaves. Serve with lime wedges and extra mango chutney, if you like.

Peanut butter cheesecake

Oil and line a 20cm round loose- bottomed cake tin with cling film, making it as smooth as possible. Melt the butter in a pan. Crush the biscuits by bashing them in a bag with a rolling pin, then stir them into the butter until very well coated. Press the mixture firmly into the base of the tin and chill. Soak the gelatine in water while you make the filling. Tip the ricotta into a bowl, then beat in the peanut butter and syrup. Ricotta has a slightly grainy texture so blitz until smooth with a stick blender for a smoother texture if you prefer. Take the soaked gelatine from the water and squeeze dry. Put it into a pan with the milk and heat very gently until the gelatine dissolves. Beat into the peanut mixture, then tip onto the biscuit base. Chill until set. To freeze, leave in the tin and as soon as it is solid, cover the surface with cling film, then wrap the tin with cling film and foil. To defrost, thaw in the fridge overnight. To serve, carefully remove from the tin. Whisk the cream with the sugar until it holds its shape, then spread on top of the cheesecake and scatter with the peanut brittle.
