Pina Colada Cup Cakes Recipe

  • Batter:
  • Butter 3 oz
  • Castor sugar 4 and 1/2 oz
  • Eggs 2
  • Olpers cream 1/2 cup
  • Coconut essence 1/2 tsp
  • Pineapple chopped 2-3 tbsp
  • Self raisng Flour 4-1/2 oz
  • For icing topping:
  • Icing sugar 5 oz
  • Coconut essence 1/2 tsp
  • Coconut cream 2 tbsp
  • Pineapple cubes for decoration
  • Glazed cherries for decoration
  • Cooking Directions


    1. Pre-heat oven on 190 degrees.

    2. Beat together butter and castor sugar untill creamy.

    3. Add in coconut essence, coconut cream and 2 eggs.

    4. Now beat them for 1 minute.

    5. Add in flour and beat on low speed.

    6. Keep beating until mixture is smooth.

    7. Fold in 4 tbsp of chopped pineapples.

    8. Divide the mixture into paper cases.

    9. Bake them for 20 mins.

    10. Removethem and cool on wire rake.

    11. Topping: Mix icing sugar with coconut essence and coconut cream.

    12. Mix them well to make a thick glossy icing.

    13. Spread the icing over each cupcake.

    14. Thread a peice of pineapple and cherry onto a coocktail umbrella.

    15. Press them into each cupcake.

    16. Serve your beautiful pina colada cupcakes.
