Ingredients

  • For Papadi:
  • Flour 2 cups
  • Salt ½ tsp
  • Oil 1 tbsp
  • Oil for frying
  • Other Ingredients:
  • Date and tamarind chutney ½ cup
  • Green chutney ½ cup
  • Yogurt 3 cup (whipped)
  • Chat masala 1 tsp
  • Salt ½ tsp
  • Chili powder 1 tsp
  • Cumin 1 tsp (roasted and crushed)
  • Potato 2 (boiled and cubed)
  • Fresh coriander for garnishing
  • Sev for garnishing
  • For Date Tamarind Chutney:
  • Dates ½ cup
  • Tamarind pulp ½ cup
  • Jiggery 2 tbsp
  • Chili powder 1 tsp
  • Salt ½ tsp
  • For Green Chutney:
  • Mint leaves 1 cup
  • Coriander leaves ½ cup
  • Onion 2 tbsp
  • Sugar 1 tsp
  • Salt ¼ tsp
  • Green chilies 3
  • Lemon juice ¼ cup

Cooking Directions

  1. For Date Tamarind Chutney: Remove seeds from dates.
  2. Add tamarind pulp, jiggery, chili powder and salt with 1 cup water, cook for 20 minutes till thick.
  3. Cool, blend and use.
  4. For Green Chutney: Put all in a blender and blend till smooth.
  5. For Papadi: Mix altogether flour, salt, oil 1 tbsp knead with enough water to make dough, knead well.
  6. Roll out the dough to a large circle.
  7. Cut out small rounds using cookie cutter.
  8. Prick each papadi well.
  9. Deep fry in hot oil on medium flame until golden and crisp.
  10. Cool and store.
  11. To Serve: Combine papadi with date tamarind chutney, green chutney and salt in a large serving bowl, mix well.
  12. Top with potatoes, yogurt, sprinkle chat masala, cumin and chili powder.
  13. Serve immediately, garnish with coriander and sev.
