  • Ingredients

– Half cup Cooking Oil

– 3 Onion

– 4 Cardamom

– 700g Mutton (lamb)

– 2 tbsp Ginger Garlic Paste

– As per taste Salt

– 1-1/2 tbsp Red Chili Powder

– 1 tbsp Coriander Powder

– 1 tbsp Cumin Powder

– 1 tsp Garam Masala Powder

– 1 tbsp Whole Garam Masala

– 1 cup Yogurt

Cooking Method

1- In a pan, add cooking oil, onion and cook until light brown

2- Grind yogurt and cardamom

3- In another pan, add mutton, grinded paste and mix it, then keep in the refrigerator for an hour

4- In a pan, add cooking oil, ginger garlic paste and cook until light brown

5- Now, add mutton and cook for 2-3 minutes

6- Now, add salt, red chili powder, coriander powder, cumin powder, garam masala powder, whole garam masala and cook for 5 minutes

7- Now, grind fried onion, yogurt and add to it, then simmer for 30-35 minutes

Marmalade pork

Heat the oil in a large frying pan and briefly cook the garlic, stirring with a wooden spoon, to start it softening. Add the pork to the pan in a single layer, season and cook for 6 mins each side, until golden and cooked through. Meanwhile, mix the stock with the thyme and marmalade. Remove the pork from the pan and set aside briefly to rest on a warm plate. Pour off any oil from the pan, then pour in the marmalade mixture and bubble to make a sauce. Return the pork to the pan, coat in the sauce and serve with quick-cooking vegetables like baby potatoes, spinach and peas.

Bring a large pan of salted water to the boil. Add the potatoes and cook for 12-15 mins until tender. Drain , then return to the pan and use a masher to smash them up, but don’t fully mash them.

Heat the fat in the chicken’s roasting tin in the oven. Once hot, add the potatoes. Toss them in the fat and juices, then season generously. Return the tin to the oven and roast for 20 mins.

Remove from the oven and mix in the spring onions. Return to the oven for 5 mins before serving.

Breton braised lamb & haricot beans

Put the beans in a saucepan and cover with water. Add the quartered onion, the halved carrot and halved celery, the bay leaves, parsley stalks and peppercorns. Bring to the boil, reduce the heat and simmer for 30-40 mins until the beans are soft. Drain well and reserve the cooking liquid, discarding the onion, carrot and celery.

While the beans are cooking, heat half the olive oil in a heavy-based flameproof casserole. Brown the lamb in batches over a high heat. As each batch is cooked, remove it and set aside on a plate. Reduce the heat, add the chopped onion to the pan with the diced celery and carrot and cook until well coloured. Add the garlic and cook for another couple of mins.

Return the lamb to the pan and add all the remaining ingredients, except the beans. Bring to the boil, reduce the heat to very low and cover, then cook for 2 hrs. Add the beans 45 mins before the end of cooking time. Stir the lamb round every so often. If the lamb looks dry, add some of the bean cooking liquid.

Remove the lid for the last 30 mins of cooking time, and season. This helps the cooking liquid to reduce. You should end up with a thick stew of tender lamb and soft beans. Scatter over the parsley and serve.

Remove the outer leaves of the cabbage and cut it into six wedges. Heat the butter in a large frying pan until starting to brown, add the cabbage and cook until burnt on one side. Add more butter to the pan if you need to and use tongs to turn the cabbage and burn on the other side. Season with sea salt and serve.
