Ingredients

  • 1 tbsp vegetable oil
  • 1 tsp chili powder
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp cayenne pepper
  • 1 bay leaf
  • 1 (10 ounce) package frozen chopped spinach
  • 1/4 cup water
  • 1 white onion, halved and sliced into 1/2-inch rings
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup lentils
  • 1/2 cup water
  • 2 cloves garlic, crushed
  • 1 1/2 tsp ground coriander
  • 1 tsp salt
  • 1 tsp ground cumin

Directions

In a heavy pan heat oil over a medium heat. Cook and stir onion in the hot oil until beginning to turn golden brown, about 10 mins. Add minced garlic to onion and cook and stir until fragrant, about 1 min more. Mix chicken broth, lentils, 1/2 cup water, crushed garlic, coriander, salt, cumin, chili powder, ginger, cinnamon, turmeric, cinnamon, cloves, cayenne pepper, and bay leaf into onion mixture and bring to a boil. Cover the pan and lower heat to medium-low, and simmer until lentils are soft, about 35 mins. Place spinach in a microwave-safe bowl and add 1/4 cup water. heat in microwave for 5 mins. Stir spinach and continue cooking in microwave until heated through, about 5 minutes more. Let spinach cool, about 5 mins and drain water and squeeze excess water from spinach. Mix spinach into lentils and cover pan and simmer until heated through, about 10 mins.

Jumbo turkey samosas

In a large bowl, combine the curry paste, mango chutney and 2 tbsp yogurt, and mix well. Fold in the potatoes, turkey, peas and coriander, then season well. Heat oven to 200C/180C fan/gas 6. Cut the sheets of filo in half lengthways so you have 12 strips – keep the pastry covered with a tea towel while you work so it doesn’t dry out. Layer up 3 sheets of filo, brushing a little oil between each sheet. Pile a quarter of the filling in the top corner of the pastry in a triangle shape. Fold the pastry over to encase the filling, then keep folding until the parcel is sealed and the filo is used up. Brush the final edge with a little beaten egg to help stick the pastry together. Repeat to make all 4 jumbo samosas. Lay your samosas on a baking sheet and brush each one with more beaten egg, then sprinkle with sesame seeds. Bake for 35 mins or until the samosas are golden brown and the filling is piping hot. Serve with the remaining yogurt, some mango chutney and coriander leaves.

Crumble saffron into a small bowl, add the milk and leave to steep

Place the coriander seeds, salt and peppercorns into a pestle and mortar and crush

Add the roughly chopped ginger and garlic and pound to create an aromatic paste.

Place the chicken into a large bowl and add the yoghurt, gram flour, turmeric and the paste from the pestle and mortar. Stir thoroughly, cover and leave to marinade for an hour or longer if possible.

Heat oil or ghee in a pan and add the cloves, cardamom pods, cassia and the dried red chillies and fry for a few minutes until fragrant.

Add the minced onions and fry gently on a medium heat for about 10 minutes, until they just begin to brown.

Add chicken and stir-fry for about 5 minutes on a medium heat, stirring occasionally.

Place the lid on the pan, reduce the heat and leave to cook for about 15-20 minutes.

Pour in the creamed coconut, with the ground almonds and poppy seeds then stir to thicken.

Increase the heat and simmer until the chicken is tender and the sauce has thickened to the consistency you want. Pour in the saffron milk for added decadence and remove the pan from the heat.

Garnish with the garam masala and fresh coriander. You can also add a squeeze of lemon juice for added freshness, then serve.

Heat the oven to 190C/170C fan/gas 5 and line two baking sheets with baking parchment. Put the kale in a large bowl and toss with the oil, garlic, cloves, star anise, cinnamon and plenty of seasoning. Spread the kale mixture over the prepared sheets in a single layer, then roast for 15-20 mins, tossing halfway through, until the leaves are crisp and any stalks are tender – keep a close eye on the kale, as it can catch quite quickly. Leave to cool. Meanwhile, make the dressing. Whisk the orange zest and juice, vinegar and oil together, then stir in the chestnuts and sultanas. Toss the dressing with the kale and serve.
