  • Egg 3
  • Caster sugar 6 oz
  • Vanilla essence 1 tsp
  • Lemon 2 (juice and zest)
  • Milk 5 fl oz
  • Butter 1 tbsp
  • Flour 10 ½ oz
  • Baking powder 1 ½ tsp
  • For Frosting:
  • Icing sugar 8 oz
  • Unsalted butter 4 oz
  • Olpers Cream 1 tbsp
  • Vanilla essence 1 tsp
  • For Decorate:
  • Pistachios 2 tbsp (blanched)
  • Lemon zest as required
  • Cooking Directions


    1. Beat eggs and caster sugar and add vanilla essence, lemon juice and zest.

    2. Boil milk and butter together and on a low speed add it slowly to the batter.

    3. Fold in flour and baking powder.

    4. Spoon into a 9” greased and lined tin and bake for 40 minutes on 180 degrees. Cool.

    5. For Frosting: Beat butter and sugar and add in the essence and cream.

    6. Fill frosting in a piping bag and pipe it in a spiral pattern.

    7. Decorate with pistachios and lemon zest.

Process the milk, strawberries, cream cheese and ice-cream in a food processor until smooth. Drizzle the insides of 4 x 2 cup (500ml) capacity serving glasses with strawberry topping.
