Ingredients

  • 1/2 cup mayonnaise
  • 1 tsp curry powder
  • 4 hard-cooked eggs, peeled and chopped
  • salt and pepper to taste
  • 8 slices bread

Directions

Mix  mayonnaise and curry powder together in a bowl. Gently stir in eggs, then season to taste with salt and pepper. Evenly divide between 4 slices of bread, top with remaining 4 slices.
