Creamy Sweet Potato Soup with Maple Cream Recipe

  • Olive oil 1 tbsp
  • Onion 1 (chopped)
  • Leek 1 (white part)
  • Sweet potatoes 2 kg (peeled and cut into cubes)
  • Chicken stock 2-3 cup
  • Cinnamon stick 1
  • Vegetable stock 4 cup
  • Cider vinegar 1 tbsp
  • Cayenne pepper 1 pinch
  • Black pepper 1 tsp
  • Salt 1 tsp
  • Olpers cream ¼ cup
  • Nutmeg ½ tsp (freshly ground)
  • Clove powder 1 pinch
  • For the Maple Cream:
  • Olpers cream ½ cup
  • Maple syrup 3 tbsp
  • Salt 1/8 tsp

Cooking Directions

  1. Heat olive oil saute onion and leek for 3 minutes.
  2. Add sweet potatoes, chicken stock, salt, cinnamon stick and vegetable stock.
  3. Give a boil and simmer on low heat for 40-45 minutes until sweet potatoes tender.
  4. Now blend in blender till creamy, don’t forget to discard cinnamon before blending.
  5. Pour blended mixture into pan stir in vinegar, cayenne, black pepper, salt, cream, nutmeg and clove simmer but don’t let boil.
  6. For the Maple Cream: Whisk cream into bowl slowly adding maple syrup and salt.
  7. Pour soup into bowls put dollops of cream and serve.

Chicken Vegetable Soup Recipe

In a pot, saute chicken in butter for 3 minutes.Add onion, celery, green pepper and garlic. Saute for another 3 minutes. Add broth, boullion, thyme and pepper. Bring to a boil. Add potatoes and carrots. Reduce heat and simmer for 20 minutes, or until vegetables are tender. Remove from heat; quickly stir in cream.

Mix all the ingredients except the oil, and beat to a fluffy batter. Rest in a cool place about 15 minutes. Heat the oil and deep fry spoonfuls of the batter to a golden color, first at high then medium.
