Ingredients:

  • Chicken wings 8 pieces
  • Garlic 1/2 kg
  • Lemon 2
  • Tomato ketchup 3 tbsp
  • Oil 2 cup
  • Capsicum 1
  • Onion 1
  • Green Chili 2
  • Fresh Coriander 1/2 bunch
  • Tomato 1
  • Lemon 1 Chili
  • Garlic Sauce 3 tbsp
  • For Chili Paste:
  • Red Chili 4 Talhar
  • Pepper 6 Ground
  • Red Chili 10

Method:

For chili paste: Put 1 cup water in a pan and add in Talhar pepper, whole red chili and ground red chili, cook well. Put all these in a blender and blend it well to make thick paste. Chili paste is ready. In a pan stir fry the garlic in oil. Now add wings in it and fry them. Now add lemon juice and ketchup and salt, fry lightly. Now add water in it. Let it cooked for 7-10 minutes and then add chili paste. Continue cooking and add sliced capsicum, onions, tomatoes and fresh coriander in the pan. Now add lemon juice, ketchup and chili garlic sauce in it and mix it well in pan. Dish it out now and serve it.

Roast chicken garden salad

Heat oven to 200C/180C fan/gas 6. Season the chicken inside and out, then stuff the cavity with 1 of the lemons and the thyme. Sit in a roomy roasting tin, drizzle with olive oil and roast for 40 mins. Remove the tin from the oven, then scatter the ciabatta pieces around the chicken and ruffle over the prosciutto. Add the garlic and remaining lemon halves to the tin. Roast everything together for 40 mins more until the croutons and prosciutto are crisp. Remove from the oven, transfer the chicken to a plate and leave to cool. Remove the croutons and prosciutto, and set aside. While the chicken is cooling, cook the green beans in a pan of boiling water for 5 mins. Drain, cool under cold water, then tip into a big bowl with the spring onions and parsley. To make the dressing, squash the roasted lemon and garlic in the roasting tin with a potato masher. Remove all the skin from the garlic, then stir in the olive oil and lemon juice with some seasoning – scrape the bottom of the tin to get all the sticky chicken juices into your dressing. Stir in any resting juices from the chicken and set aside. When the chicken is cool enough to handle, strip the meat off the bones. Just before serving, add the dressing, chicken, croutons, prosciutto and lettuce to the green bean mix in the bowl, toss together and scatter over a large serving platter.

Braised cabbage & carrots

Heat the butter in a pan, then add the carrots and sizzle for 1 min until glossy and coated. Nestle the cabbage wedges snugly in the pan and pour over the stock. Cover with a lid and simmer for 30 mins until the cabbage has wilted and the carrots are tender.

Tip the yogurt, cumin, turmeric, 1 tsp sea salt and the lamb shanks into a large mixing bowl, then mix to coat the lamb. Cover and pop in the fridge for a couple of hrs, or overnight if you have time.

Heat oven to 160C/140C fan/gas 4. Heat the oil in a large flameproof casserole dish over a medium heat, add the shanks and brown all over for 10 mins, then remove from the dish. Scatter the onions into the dish and fry for 10 mins until golden brown. Stir in the curry powder, garlic and ginger and cook for 3 mins until aromatic. Add the lamb shanks back to the dish along with the tomatoes, chillies, curry leaves, cardamom pods and lime pickle. Give everything a good stir and pour over the stock. Bring up to a simmer, cover, then transfer to the oven and cook for 3 hrs.

Remove the lid and cook for 1 hr more – this will help reduce some of the liquid and char any exposed meat. When the lamb is very tender, leave to rest for 30 mins or leave to cool completely and reheat the next day for the best flavour. (Can be made up to two days in advance.) Scatter with chopped mint and serve with naan bread and rice on the side.

Cous Cous Cups

INGREDIENTS: Cous Cous Cups -1 cupcake/muffin tray -4 cups of cous cous -2 tbsp Parmesan cheese -2 pieces of wholewheat rusks -Preheat oven – 180C / 350F 1.Boil cous cous as needed. 2.Grate the wholewheat rusks. 3.Once done, mix everything together along with the Parmesan until well blended. 4.You’ll know it’s well blended once it’s become very sticky and holds its shape when pressed against the bowl using a spoon. 5.Grease cupcake tray holes with butter. 6.Fill each hole in the cupcake tray halfway. 7.Create a cup opening in the middle using any object with a round bottom (I used a pestle to do this). 8.Bake for 45 min. INGREDIENTS: Avocado puree -1 whole ripe avocado -1/4 cup almond milk -1/2 tsp Dijon mustard -3 tsp lime juice -Rock salt -4 drops balsamic fig -3 tsp Basil pesto -Affilla 1. Blend until thick and smooth. COMBINING: 1.Put a dollop of sour cream into the cous cous cups before putting the avocado puree on top. 2.Top with roasted bell peppers sautéed with onions, garlic & eggplant. Guaranteed irresistible! They also work as canapes too. Make sure you’ve made a lot to go around when you’re serving these out to hungry guests!
