ترکیب
۔ایک گرائینڈر میں دہی اور براؤن پیاز ڈال کر گرائینڈ کر لیں۔
۔اب ایک برتن میں چکن لیں اس میں نمک ،گرائینڈ کیا ہوا پیسٹ ،ادرک لہسن پیسٹ ،لیموں کا رس ،کاجو پاؤڈر، کالی مرچ پاؤڈر ،زیرہ پاؤڈر اور تِلوں کا تیل ڈال کر اچھی طرح ملا لیں اور ایک گھنٹے کیلیے فریج میں رکھ دیں ۔
۔اب ایک ٹرے پر کھانے کا تیل لگا کر تیار کیا ہوا چکن رکھ دیں اور 150ڈگری سینٹی گریڈ پر چالیس سے پینتالیس منٹ تک اوون بیک یا بار بی کیو کر لیں ۔

Kibbeh bil Sanieh (Kibbeh Pie) with cabbage salad

In a large pan, heat a little olive oil and cook half the onions until translucent then add the lamb, and one tsp of each spice. Add the pine nuts and cook for about 10 minutes on medium heat, until the lamb is cooked. Set aside to cool.

In a small bowl, let the bulghur soak for about 30 minutes. In a large bowl, combine the minced beef with the remaining onion and spices, then add the bulghur, and mix well with your hands.

In a baking tray, add half the minced meat mixture and spread it evenly on the bottom. Add the lamb filling, and top with the remaining meat mixture. Smooth out the surface, sprinkle with a little olive oil and bake in a preheated at180C oven for 20-25 minutes.

In a small bowl, whisk the lemon juice and oil with salt and pepper, then toss with the shredded cabbage. Serve with a slice of kibbeh and a dollop of yoghurt.

Jerk chicken

Heat oven to 200C/180C fan/gas 6. With a stick blender or in the small bowl of a food processor, whizz together the jerk seasoning, coconut cream, chilli, spring onions, thyme, garlic and ginger. Stir in the lime zest and juice, and season to taste. Slash the chicken thighs down to the bone a couple of times, then smear over the jerk paste. Roast in the oven for 45-50 mins until golden brown and cooked through. Sprinkle over more thyme and serve with rice & peas.

Herby chicken & butter bean soup

If using a leftover chicken carcass, place in a large saucepan and cover with 2 litres of water. Bring to the boil, then cover with a lid and gently simmer for 20 mins. Meanwhile, heat the oil in another large saucepan. If using chicken thighs, add these and brown on all sides, then remove and set aside. Add the onions to the oil and cook for 10 mins until starting to caramelise. Add the carrots, herbs, spices and flour, and stir for 1-2 mins to toast the spices. If using a chicken carcass, strain the cooking liquid into the pan with the vegetables, otherwise add the browned chicken thighs and stock. Stir well, cover and simmer for 30 mins. If using chicken thighs, remove them from the pan, shred the meat and discard the bones. Add the meat (or the meat from the carcass) back into the soup, along with the butter beans, season and heat through for 1-2 mins. Use a hand-held blender to blitz the soup until smooth, or leave it chunky. Or blend about half, so it’s creamy but still has chunks of chicken, carrot and butter bean. Serve with extra pepper, and good crusty bread.
