Have you ever wondered what is it about kheer that makes it such an endearing sweet dish? Aside from the fact that almost anyone can make it, what really works in favor of this ancient sweet dish – which even Ayurveda recommends in its list of happy food for good health – is that it is an extremely versatile dish.

Across the subcontinent, from Dhaka to Kashmir, Kheer remains one of the most popular desserts. In this part of Pakistan, various varieties of Kheer are available which include Gajar Kheer, made with carrots and Sawayian Kheer made with vermicelli.

The Middle Eastern region has a similar sweet dish called firni. It seems to have originated in ancient Persia or the Middle East and was introduced to the subcontinent by the Mughals and is now a popular dish in the South Asian region.

Neighbour China too has its own version of kheer, which is made of fruits soaked in honey. Called the eight jewel rice pudding, it was a celebratory dish in the Ming Dysnasty and was prepared by cooking the fruits in a wide bottom pan in layers.
