Tropical yogurt cupcakes:

Ingredients

Unsalted butter 90gm
Caster sugar 110gm
Orange rind 1 tsp
Eggs 2
Flour 150gm
Baking powder 1 tsp
Banana mashed 1
Pineapple chopped 120gm
Yogurt 95gm
Ingredients for Icing:
Unsalted butter 30gm
Cream cheese 100gm
Orange zest 1 tsp
Icing sugar 1 ½ cups
Fruits to decorate

Method :
Beat butter, caster sugar and eggs and add in rind. Add in mashed banana, pineapple, yogurt and fold in the flour and baking powder. Spoon in cases in cupcake tin and bake at 180 degrees c for 25 minutes or until done. Let cool. For the icing, beat butter, add in cream cheese, icing sugar and zest and mix well. Once cupcakes are cold, frost them and decorate with any dehydrated fruits.

Mango habanero wings:

Ingredients

Chicken wing ½ kg
Mango juice 1 cup
Brown sugar ¼ cup
Green chilies minced 3
soy sauce 2tbsp
Mango habanero sauce 2 tbsp
Hot chili sauce 1tbsp
Rice vinegar 1tbsp
Butter ¼ cup
Garlic minced 2 cloves
Honey 2tbsp
corn flour 1 cup
oil for frying
Method :
Blend mango juice, brown sugar, green chillies, soy sauce, mango habanero sauce, hot sauce and vinegar. Melt butter in a saucepan. Add minced garlic. Saute. Add the habanero sauce mixture, bring to a simmer. Reduce heat; add honey. Simmer, stirring frequently, until sauce is reduced and thickened to a glaze.
Coat chicken wings lightly with cornflour. Fry in hot oil until golden brown and crispy. Drain. Place wings in a large bowl. Pour the sauce over the wings and mix, coating the wings with the sauce.
