Classic Dhokla tossed with flavourful tandoori masala results in an array of delicious flavours.
TANDOORI DHOKLA
Ingredients
Freshly chopped coriander leaves for garnish
Dhokla
2 cups gram flour (besan)
½ tsp turmeric powder
Salt to taste
½ tsp ginger-green chilli paste
1 cup yogurt
1 tbsp oil
1 tsp fruit salt
Tempering
1 tbsp oil
1 tsp mustard seeds
7-8 curry leaves
2 tbsps tandoori masala powder
Method
1. In a bowl, add gram flour, turmeric powder, salt, ginger-green chilli paste, and yogurt. Add sufficient water and mix well to make a semi-thick batter. Add oil, fruit salt and mix well.
2. Heat sufficient water in a steamer and grease a thali with oil, set aside. Add the prepared mixture in the thali and place it on the steamer. Steam for 10-12 minutes and set aside to cool slightly.
3. Cut the prepared dhokla into cubes and set aside.
4. Heat oil in a non-stick pan, add mustard seeds, let them splutter. Add 7-8 curry leaves, tandoori masala powder and dhokla pieces. Toss well and cook for 30 seconds.
5. Garnish with chopped coriander and serve hot.
