Stir Fry Noodles

Stir-fried Noodles is the perfect dish to prepare on a tired evening, when you want to sit down to a tasty and sumptuous but quick One Dish Meals! With paneer and sprouts, this noodle preparation is quite filling, while ingredients like spring onions and soy sauce make it very tasty. The most exciting twist in this dish, however, is the garnish of crushed peanuts, which is sure to tickle your taste buds with its nutty flavour and excite your palate with its exciting crunch. Serve it hot, and garnish it just before serving to preserve the crispness of the peanuts.

Preparation Time: 15 minutes.
Cooking Time: 7 minutes.
Serves 3.

3 cups boiled rice noodles
1 cup paneer (cottage cheese) cubes
2 tbsp oil
½ tsp finely chopped garlic (lehsun)
½ cup finely chopped spring onion whites and greens
1 cup bean sprouts
¾ tsp chilli powder
2 tsp sugar
2 tsp soy sauce
1 tbsp lemon juice
2 tbsp roasted and coarsely crushed peanuts
Salt to taste

For the garnish
2 tbsp roasted and coarsely crushed peanuts
1 tbsp finely chopped spring onion greens

1. Heat the oil in a broad non-stick pan, add the garlic and spring onion whites and greens and sauté on a high flame for 1 minute.
2. Add the paneer and bean sprouts and sauté on a high flame for 1 to 2 minutes.
3. Add the noodles, chili powder, sugar, soya sauce, lemon juice, peanuts, and salt, mix well and cook on a high flame for 3 to 4 minutes, while stirring occasionally.
Serve hot garnished with peanuts and spring onion greens.
