Pancakes made with dates-infused batter roasted to perfection.
STICKY DATE PANCAKES
Ingredients
10-12 seedless dates, soaked in hot water
5 tbsps refined flour
1-2 tbsps buttermilk
½ tsp baking powder
¼ tsp soda bicarbonate
2 tbsps + 1 tsp oil
2 bananas
Powdered sugar for dusting
Toffee sauce
¼ cup castor sugar
3 tbsps butter
¼ cup fresh cream
Method
1. Heat castor sugar in a non-stick pan. Add 2-3 tbsps water and let it caramelize brushing the sides of the pan with water at intervals.
2. Place soaked dates, buttermilk, refined flour in a food processor and grind. Add baking powder, soda bicarbonate, 2 tbsps oil and grind again to a smooth batter. Transfer in a bowl.
3. Peel and slice bananas.
4. Heat 1 tbsp butter in another non-stick pan, add banana slices and sauté for half a minute. Transfer in a bowl.
5. Add remaining butter to caramelized sugar and mix well. Add cream and mix well.
6. Heat 1 tsp oil in another non-stick pan, spread a ladle full of batter thickly and cook. Turn the date pancake when the underside is brown and cook the other side similarly. Similarly cook the remaining pancakes.
7. Strain the prepared toffee sauce.
8. Transfer the date pancake on a serving platter, drizzle toffee sauce, top with sautéed banana slices, drizzle more toffee sauce over banana slices, dust powdered sugar on top, place another date pancake on the side and serve immediately.
